This is another recipe of my sister’s. This is “clean” eating at its finest. Don’t let that scare you… it is beautiful, delicious and good for your “healthy” friends, as Carolin calls them (you know who you are)!
INGREDIENTS
1 c wild rice cooked in chicken stock as per package directions
1 med tomato chopped
1 small bunch of green onion
½ c edamame
½ c chopped celery
½ c corn
1/3 c chopped FRESH basil
Salt, pepper and tarragon to taste
Icing
SAUCE
toppings
dressing
4 tbsp rice wine vinegar
1 tbsp canola
1 clove garlic
INSTRUCTIONS
Combine the dressing ingredients and mix well.
Once the wild rice is cooked and cooled, add all of the "salad" ingredients and toss with the dressing.
