Whipped Feta

I serve this both as an appie and as a dessert.  Great on a mezze platter drizzled with olive oil and a few finely chopped olives OR as dessert drizzled with honey and chopped pistachios.

INGREDIENTS

  • 8 oz of feta
  • 3 oz cream cheese (room temp)
  • Chopped pistachios drizzled with honey OR
  • Chopped olives and herbs drizzled with olive oil

INSTRUCTIONS

  1. Leave the cream cheese on counter until very soft.
  2. Whip both cheeses in food processor until very smooth.
  3. Spread on plate and finish with sweet or savory toppings.

TIPS & HINTS

This freezes really well. In place of chopped olives and oil, I use jarred tapenade! Also, when served as a dessert I love it with a sweet cracker like a Raincoast Crisp.
