Very Fancy Nachos

This recipe takes nachos to another level and if you have cheese lovers in the crowd, like we do, this is a must try.  The gorgonzola is a tremendous addition to the fontina, which melts beautifully, and the fennel seeds add the very non-traditional anise flavour to the mix.  This may sound wacky but, trust me - WOW!

INGREDIENTS

  • Tortilla chips (preferably unflavoured and lightly salted)
  • 3 c grated fontina
  • 1½ c crumbled gorgonzola
  • 2 tsp crushed fennel seeds

INSTRUCTIONS

  1. Spread one layer of your favourite tortilla chips on a cookie sheet.  We use a high-quality chip that doesn’t have any fancy flavour but we do like it salted.
  2. This is the fussy part… cut or break the gorgonzola into small pieces and spread it across all the chips – ideally each chips gets some gorgonzola.
  3. Spread the shredded fontina over the chips, on top of the gorgonzola.
  4. Top with crushed fennel seeds.
  5. Broil for about 3 minutes and serve immediately.
