Tristan’s Bacon Wrapped Water Chestnuts

Tristan Chambers, the middle child, is a wonderfully creative soul.  She is the best of both parents; wildly independent, entrepreneurial and creative. I’m always excited to see her and learn what she’s been up to during the week.  She comes up with great ideas and runs with them whether that’s making her own kombucha, pickling vegetables (just because she loves pickles) or repotting succulents!  There are great things to come from this Padawan and she makes a mean appie!

INGREDIENTS

  • 1/3 c packed brown sugar
  • 1/3  c ketchup
  • 1 tbsp Worcestershire sauce
  • 2 tbsp soya sauce
  • 2 tbsp canola oil
  • 1 tbsp minced garlic
  • Ground black pepper
  • 1 pound bacon (use thin NOT thick sliced)
  • 2 (8 ounce) cans water chestnuts - drained

INSTRUCTIONS

  1. Preheat oven to 375° F .
  2. In a medium-size mixing bowl, everything except for the bacon.  Allow to marinate for several hours.
  3. Cut bacon in half. Wrap a half slice of bacon around each chestnut. Secure the bacon with a toothpick. Arrange on a cookie sheet and bake for 30 to 35 minutes until the bacon is cooked.
