Summer Goat Cheese

I served this for the first time in the spring of 2022 and it was a huge hit. This may be the easiest appie I make.

INGREDIENTS

  • 8 oz log of plain goat cheese (softened on counter)
  • 1/4 c good quality olive oil
  • 1/4 tsp crushed chili
  • 3 cloves fresh minced garlic
  • 1/4 c fresh chopped flat leaf parsley
  • 1/2 tsp Kosher salt

INSTRUCTIONS

  1. Mix the oil, garlic and chili for about 30 mins to let the flavours blend.
  2. Place the goat cheese on the serving plate and roughly press it down.
  3. Pour the oil mixture over the cheese.
  4. Sprinkle with parley and kosher salt.
  5. Serve with crackers or baguette.

TIPS & HINTS

The key to this recipe is the salt! Make sure it has enough and that it tastes salty when you eat it. If it doesn't, add more.
