Ramen

One cold covid evening in 2021, Carolin and I made ramen at the Chambers’ home in the city.  We were trying to move the product – a gigantic smoked turkey to be exact.  It was easy and truly tremendous.  Here’s how we did it!

INGREDIENTS

  • 4 – 5 cups of good quality chicken stock
  • 4 stalks of spring onions trimmed and cut in half
  • 4 – 5 cloves of garlic
  • 2 inch piece of ginger sliced
  • 4 red chili or 1 ½ tbsp dried chili flakes (crushed red pepper) omit if you don't like spicy food
  • ¼ cup soy sauce
  • 2 tbsp mirin
  • 6 – 8 ounces shiitake mushrooms stems trimmed and sliced, or cut in half

  • Cooked chicken or pork (or smoked turkey).
  • Steamed greens: Cook baby bok choy or spinach in the microwave or fying pan drizzled with soy sauce and sesame oil
  • Soft boiled eggs: bring water to a boil and put four eggs in for 6 – 6 ½ minutes.  Remove from boiling water and place in ice bath until cool enough the handle and then peel them carefully.
  • Green onions finely chopped

INSTRUCTIONS

Saute the garlic until fragrant and then add all other ingredients, bring to a boil and simmer until the mushrooms are cooked.

To assemble:

Cook 4 pkgs of Mr. Noodles in boiling water for 1-2 minutes and divide between bowls, cover with broth then add the toppings.
