Muffuletta

These are the perfect sandwiches for a picnic on the lake as they benefit from being wrapped and packed tightly.  You can make a whole loaf which is more traditional (as below) but I generally buy triangle ciabatta buns from Costco and make individual sandwiches.

INGREDIENTS

  • Italian bun
  • Provolone
  • Italian cold cuts like
  • Mortadella
  • Genoa salami
  • Hot capicola
  • Prosciutto

Tapenade FIlling

  • ½ c green olives with pimentos
  • ½ c black pitted olives (preferably not canned)
  • 184 ml jar of artichokes drained
  • 1 clove minced garlic
  • 1 tbsp minced jalapenos
  • 1/3 c parsley
  • ¼ c canola

INSTRUCTIONS

Cut bread in half horizontally (pull out some to make a hollow if you want). Put half the pilling on bottom, top with cheese and meats (whatever Italian meat you like & provolone) then rest of filling on top.  Tightly wrap and put a weight on them for several hours in fridge.

TIPS & HINTS

Use premade tapenade from a jar instead of making it yourself
