Mixed Greens

This is a Meg original and has become a favourite.  I made this one night “moving the product” (a term coined by “the twins” which means cleaning out the fridge and using up whatever we have).

INGREDIENTS

  • Mixed greens
  • Pepper (yellow, red or orange)
  • Cucumber
  • Green onions
  • Raspberries
  • Feta
  • Sunflower seeds or nuts

  • 2 tbsp white balsamic (e.g. cranberry pear)
  • ¼ c canola oil
  • ¼ tsp salt (or less)
  • ¼ tsp pepper (or less)
  • 1 tsp grainy mustard
  • 1 tsp Dijon mustard

INSTRUCTIONS

Toss the greens and veggies with dressing and top with raspberries, feta and seeds. If you don't have sunflower seeds, almonds or walnuts are also a great addition!

TIPS & HINTS

Carolin often adds some finely shredded purple cabbage or sprouts to her mixed green - which are lovely additions. Don't be afraid to move the product if you have to.
