Mom's Lemonade

For as long as I can remember, mom made this lemonade concentrate for summer. We keep it on hand at the lake as it's very popular in club soda or it can be turned into a cocktail with a splash of gin. The original recipe also called for epsom salts but I leave them out because I don't need the lemonade to have any medicinal value (which I believe is why they would have been included in the original version).

INGREDIENTS

  • 3 lbs or 6 cups of sugar (if you like it sweeter you can increase to as much as 5 lbs or 10 c)
  • Juice of 6 lemons
  • Rind of 4 lemons
  • 56g or 5 tbsp citric acid
  • 28g or 2 tbsp + 1 tsp tartaric acid
  • 6 c of boiling water

INSTRUCTIONS

  1. Mix the sugar and the acids in a large mixing bowl.
  2. Add the lemon rind and lemon juice to the sugar.
  3. Pour the boiling water over the sugar and stir until the sugar is completely dissolved.
  4. Allow to cool, pour into quart sealers and store in the fridge.

TIPS & HINTS

To drink: Pour a few tablespoons of concentrate into a glass with ice. Top with cold water and then taste. Add more syrup until it's perfect!
