Megnificent Crumbs

With the assistance of Connor and Jake, I reverse engineered a popular brand of fish coating and tweaked it a bit to our own taste (more salt).  We stood around the island one night trying and tasting until we had it just right!!

INGREDIENTS

  • 5 c or one box of corn flake crumbs (if you can’t find the crumbs, you can crush corn flakes in a food processor)
  • ½ c onion powder (danger, danger – NOT onion salt)
  • ½ c garlic powder (NOT garlic salt)
  • ¼ c seasoning salt
  • 3 tbsp dry mustard
  • 3 tbsp pepper

INSTRUCTIONS

If I use crumbs from a box, I mix this in a Ziploc bag and then store it in the same bag.  

If I crush the cornflakes in my food processor, I add the seasoning to the crumbs and give it a couple of pulses to mix and then store in a Ziploc or any airtight container.

TIPS & HINTS

We use these crumbs to coat pickerel but Kennedy Chambers used them one night to make deep fried chicken and waffles and I also use them as "bread crumbs" in house-made burgers!
