Marlene's Cowboy Caviar

This recipe is very similar to the black bean dip. The addition of the corn, tomatoes and avocado make it very pretty!

INGREDIENTS

  • 15 oz can of black bean - drained and rinsed
  • 12 oz can or corn, drained and rinsed
  • 2 large tomatoes - seeded and chopped
  • 1 large avocado, chopped
  • 1 orange or yellow pepper, chopped
  • 1/2 c finely chopped red onion
  • 1/4 c finely chopped cilantro

  • 1 tbsp red wine vinegar
  • 4 tbsp fresh lime juice
  • 2 tbsp canola oil
  • 1/2 tsp salt
  • 1/2 tsp ground pepper
  • 1/4 tsp cayenne pepper

INSTRUCTIONS

  1. Chop all the vegetables and place in a bowl.
  2. Mix all the dressing ingredients together well and toss with the vegetables.
  3. Serve with tortilla chips - preferably "Scoops"

TIPS & HINTS

When preparing this, it's nice to chop the vegetables about the same size as the beans so it is all uniform and easy to "scoop" in the chip!
