Lara’s Soft and Chewy Lemon Cookies

Lara is the quintessential northern California girl – sporty and fit, eats healthy, and is super cool.  Meals at their place are relaxed, spectacular and good for you!  As an aside – the wine is always off the hook.  So, wasn’t I surprised when she pulled these buttery, lemony bad boys out one night.  The first time I had these cookies I couldn’t stop ramming them in my pie hole.  WOW!!!  All-time favourite cookies.  I’ve made these in the city but they aren’t quite the same, I think the heat of a summer day at the lake makes the batter a bit softer and they spread more in the oven. It might just be that everything tastes better at the lake.  Anyway, if you like butter and lemon I bet you can’t eat just one!

INGREDIENTS

  • 1 c butter cold, cut into cubes
  • 2 c sugar
  • 2 eggs
  • 1 teaspoon vanilla extract
  • 1½ tbsp fresh lemon juice
  • 1 tbsp lemon zest (or more)
  • 3 c flour
  • ½  tsp baking powder
  • ¼ tsp baking soda
  • ½ tsp salt

INSTRUCTIONS

  1. Preheat oven to 350° F.
  2. In a large bowl, cream butter and sugar for 4 minutes until light and fluffy. Add eggs, vanilla, lemon juice, and lemon zest and stir to combine.
  3. Stir in flour, baking powder, baking soda, and salt and mix just until combined.
  4. Drop dough onto light colored baking sheet.
  5. Bake for 9-11 minutes. Sprinkle with white sugar.
