Homemade Oreos

I lied earlier – this is recipe is also one of my sister’s and it is NOT healthy.  These are super easy (as you can see).  They freeze really well so you can just pull some out and take when you get invited for dinner.  Ian Proven once told me that I didn’t use enough filling…  he is the foremost expert on cookies so…  use lots of filling.

INGREDIENTS

Cookies

  • 2 devil food cake mixes
  • 1 c oil
  • 4 eggs

Icing

  • 2 - 8 oz packages of cream cheese (for those who like to kid themselves, use light cream cheese)
  • 2 c. icing sugar
  • 4 tbsp butter

INSTRUCTIONS

  1. Mix the cookie ingredients well - I like to use a stand mixer.
  2. Roll into ½” balls for “oreo” sized cookies (I typically make them bigger as I’m too impatient to make them this tiny).
  3. Bake 10-12 mins at 350° F.
  4. For the icing, beat all ingredients well in a stand mixer.
  5. Cool the cookies and then "sandwich" two cookies with a generous amount of filling.

TIPS & HINTS

These cookies really spread so I recommend one test to determine how big to make the balls!
