Grilled Salmon with Avocado Salsa

Marty plays two important roles when we entertain – he’s great on the grill and he tastes stuff for me!  He’s especially good at the latter.  Marty gets the credit for this salmon dish as the most important step is not overcooking the salmon – I’m not joking…  DO NOT overcook the salmon.   This s a real crowd pleaser, looks spectacular and lives up to the lake rule: easy!  You can make a larger portion of the rub and keep it in the cupboard for use anytime.  Don’t overdo the rub or it overpowers the fish. This is enough rub for both sides of a large filet.  Have I mentioned, please don’t overcook the salmon. Remember, there’s a tail end for people who like their fish overdone!

INGREDIENTS

Avocado Salsa

  • 2 avocados, cubed
  • 1/4 c. finely diced red onion
  • Lime
  • Salt
  • Cilantro

Rub

  • 1 tsp salt
  • 1 tsp cumin
  • 1 tsp paprika
  • ½ tsp ancho chili
  • 1 tsp pepper

INSTRUCTIONS

  1. Cube the avocado, add the red onion, lime and salt to taste. Add as much cilantro as you like.
  2. 30 mins prior to cooking put oil on the salmon and apply rub.
  3. Grill the salmon on a cedar plank just until it's cooked. Once you see any "white stuff" coming from the salmon it may be ready OR it's really close.

TIPS & HINTS

Make 4x the rub and keep it in a jar so you don’t have to make the spice mix every time you make it.

This is really nice done on a cedar plank.  Soak the cedar for several hours or it will catch fire – cedar is wood.
