Grilled Prawns

Marty first made this for a turkey rub and then realized it was also magical on prawns. Make lots and store the extra in a jar in the fridge for rubbing under the skin of chicken or turkey!

INGREDIENTS

  • Large prawns - preferably 8 - 12 count
  • 1 c canola oil
  • 8 cloves of garlic, coarsely chopped
  • 1/2 c finely chopped flat leaf parsley
  • 1/4 c fresh tarragon leaves
  • 1/4 c fresh rosemary leaves
  • 2 jalapenos, seeded and chopped
  • 2 tbsp grated lime zest
  • 2 tbsp grated orange zest
  • 1 tbsp ancho chile powder
  • 2 tsp kosher salt
  • 2 tsp black pepper

INSTRUCTIONS

  1. I peel the prawns so they are easier to eat - some people choose not to - it's up to you.
  2. Put all of the above ingredients (except the prawns) into a food processors and blend into a paste.
  3. Marinate prawns for up to 30 minutes and then grill on the BBQ - the time on the grill depends on how big the prawns are.

TIPS & HINTS

Be extremely careful when grilling prawns - they are expensive! This is a great main or an appie when George visits.
