Grilled Figs with Goat Cheese

Carolin Chambers is undoubtedly one of my favourite people.  She lights a room up with her laugh, everything is water off a duck’s back and she is always running on lake time.  This is one of Carolin’s favourites and it’s perfect because it’s easy and very fancy.

INSTRUCTIONS

  1. Cut 12 figs in half (top to bottom) and brush with a bit of oil.
  2. Grill (BBQ or under the broiler) for about 5 minutes.
  3. Remove from heat and top with a small dollop of goat cheese.
  4. Put on a serving dish and drizzle with honey.
  5. Top with a few chopped pistachios or some pomegranate seeds for colour (optional).
