Grandma Amos' Biscuits

These are the best biscuits ever.  Grandma Amos was my mom's mom, who raised her children on a farm near Alexander, MB. Grandma’s trick is to “spin” each biscuit between your hands (after it’s cut) on a floured countertop so that you very gently bring the sides of the biscuit in and make the biscuit taller.

INGREDIENTS

  • 2 c flour
  • 1 tbsp baking powder
  • 1 tsp salt
  • 1/3 c butter (frozen)
  • 1 c milk

INSTRUCTIONS

Mix the dry ingredients, cut the butter into the dry ingredients until they are pea sized and give them a toss.  Add the milk and stir enough just to mix.  Turn it out onto a floured counter and gently fold dough until it comes together (DO NOT knead like bread).  Roll it gently to about 1.5” thick and cut with a round cookie cutter.  As you reroll your leftovers, be gentle.  

Bake in a hot over (425° F - 450° F) for about 15 minutes.  Once the bottoms are nice and brown, they biscuits are done!
