Faye’s Cold Pork Tenderloin

The old trapper – George Schultz – was a fixture at happy hour since our first day at the lake.  You could set your watch by his arrival at 4:30 on Saturday afternoon.  It took several years for him to introduce us to his better half, Faye Weinstein. I’m not sure where she met Mike Myers but I am positive he based his Coffee Clutch SNL character on her.  Once she realized that “the girls” were part of happy hour, she started to attend.  Faye served us this wonderful plate of tenderloin when she hosted one afternoon.

INSTRUCTIONS

  1. Cut slits in the top of a room temperature whole pork tenderloin and insert pieces of garlic.
  2. Cover with balsamic vinegar.
  3. Roast at 400° F for 25 mins.
  4. Cool, slice and serve cold.
  5. Serve drizzled with a balsamic reduction and parsley.
