Dad’s Pancakes

Growing up in the Adams’ household, we had these every Sunday for breakfast.   As a little girl, I remember a friend of my brother’s eating 13 one Sunday.   Our dad was a very modern man when it came to most things but, other than making these pancakes, he didn’t really cook. He called himself a “bull cook” which meant when mom was prepping for a party, he followed her around doing dishes. He was a good man!!

INGREDIENTS

  • 1½ c flour
  • 2 tbsp sugar
  • 1 tbsp baking powder
  • ½ tsp salt
  • 1 egg
  • 1½ c milk
  • 3 tbsp canola oil

INSTRUCTIONS

  1. Mix dry ingredients.
  2. Beat egg and add milk separately.
  3. Gently fold milk mixture into dry ingredients.
  4. Add oil and stir until just combined (should be lumpy).
  5. Bake on a hot griddle (about ¼ c of batter for each pancake).
  6. When the pancake begins to puff and has bubbles, flip and cook other side.
