Bruschetta Salad

This is a wonderful salad that is perfect for showcasing the summer tomato harvest. This is basically the same as my bruschetta recipe - I just chop the tomatoes "chunkier". This is a wonderful accompaniment to any grilled meat - I especially like it with whole grilled chicken.

INGREDIENTS

  • 4 c fresh tomatoes
  • 1/2 c finely chopped red onion
  • 1/4 c fresh basil chopped
  • 1 - 2 tbsp canola or olive oil
  • 1 -2 tbsp red wine vinegar
  • Salt and pepper

INSTRUCTIONS

  1. If using cherry tomatoes, cut in half, if using large tomatoes, roughly chop and remove the seeds
  2. Finely chop the red onion
  3. Roughly chop the basil
  4. Mix all ingredients and serve

TIPS & HINTS

If you're at the lake and run out of red wine vinegar you can substitute balsamic.
