Arugula Salad with Lemon

This is a versatile salad - great as a pop of citrus with chicken, as a topper for pizza, or as a complement to Steak Tartare.

INGREDIENTS

  • 4 tbsp canola or olive oil
  • 2 tbsp of grated parmesan cheese
  • 1 tbsp white wine vinegar
  • 1 tbsp FRESH lemon juice
  • 1 tsp Dijon mustard
  • Salt and pepper to taste

INSTRUCTIONS

  1. Whisk all dressing ingredients and toss with arugula.
  2. You can top with a bit more parm if you want!
