These cookies are really easy and a nice change from the old standards. These are Ian Proven's favourites and let me tell you he knows his cookies! A true connoisseur.
INGREDIENTS
200 g of finely ground almonds
1 c white sugar
pinch of salt
2 lg egg whites
1/4 tsp lemon juice
1/2 tsp almond extract
Icing
SAUCE

INSTRUCTIONS
Beat egg whites and lemon juice until soft peaks form.
Mix the almond extract into the egg whites.
Mix the almonds, sugar and salt in a large bowl.
Fold the egg whites into the almonds.
Mix well - knead a bit if you need to.
Roll the dough into 1 inch balls and roll in icing sugar.
Stack two cookie sheets together and top with a silpat mat or parchment paper.
Bake cookies at 300 F for 30 - 35 minutes until they look cracked and the bottoms are lightly browned.
