Allison Filmon’s Salad

We had this one night visiting our good friends Gregg and Leanna at their Loney Beach Cottage on Lake Winnipeg. It was a memorable evening, as we sang around the fire on the beach into the wee hours.  Gregg’s sister Alison, who we lost far too young, brought this salad and it has remained a cornerstone of the salad section of my recipe box since that night.  I have so many wonderful memories that I associate with food and I always think of that magical night on the beach with Gregg and Leanna, Ted and Liane and Alison Tony whenever I pull this recipe out of the box.

INGREDIENTS

  • Romaine lettuce
  • Blue cheese
  • Thinly sliced red onion

Icing

SAUCE

  • ½ c oil
  • ¼ c lemon juice
  • 1 tsp salt
  • 1 tbsp sugar
  • ½ tsp paprika
  • 2 cloves of garlic

INSTRUCTIONS

  1. Combine the dressing ingredients and mix well.
  2. Wash and break up the romaine (I often cut off some of the hard spine).
  3. Cress the romaine.
  4. Top with red onion and crumbled blue cheese.
